How Coffee is Processed

Coffee beans start as seeds in nurseries. They are transplanted to farms after a few months and grow best in tropical climates with high altitudes, ample rainfall, and moderate sunlight. It takes 3-4 years for the plants to bear fruit, known as coffee cherries.

Cultivation and Growth

Ripe coffee cherries are harvested by hand or machines, depending on the farm size. Hand-picking ensures only ripe cherries are selected, enhancing the coffee’s quality and flavor profile.

Harvesting

After harvesting, cherries are processed using either the dry or wet method to extract the beans. The dry method involves sun-drying, while the wet method uses pulping and fermentation.

Processing the Cherries

Extracted beans are dried to reduce moisture content to 10-12%. They can be sun-dried or machine-dried, ensuring they remain mold-free and in good condition for storage and shipping.

Drying the Beans

Milling involves hulling to remove the outer layer, polishing for appearance, and grading and sorting by size, weight, and color to eliminate defective beans and ensure quality.

Once milled, the green coffee beans are carefully packed in jute or sisal bags. Proper packaging is essential to protect the beans from moisture and contamination, preserving their quality during storage and transport.

Packaging the beans

Packaged green coffee beans undergo rigorous quality checks before being shipped to roasters worldwide. They are stored in cool, dry places to maintain their quality during transit.

Exporting

At the roasteries, beans are roasted to develop their flavour. Roasting times and temperatures vary, affecting the beans’ taste, aroma, and colour. After roasting, beans are ground to the desired consistency based on the brewing method.
